PINTO BEANS
Ingredients:
Pinto beans
They mainly come from cultivations in the Italian area, gathered in a farmers’ association of small organic producers, that avoid any use of herbicides, chemical fertilizers, fungicides, pesticides etc. Products are packed in a protective atmosphere in order to grant a long preservation and safe from parasite infestation.

THE RECIPE
VEGETABLE SOUP WITH BEANS AND EMMER
Ingredients:
200 g of pearl emmer “La Madre Terra”
400 g of pinto beans “La Madre Terra”
200 g of peeled tomatoes “La Madre Terra”
garlic
extra-virgin olive oil
basil
red hot pepper
salt
Preparation:
Soak the emmer for about 8 hours and cook it in the same soaking water for forty minutes. Soak the beans as well for the requested time (about 12 hours). Boil the beans. In the meantime prepare a pan with some extra-virgin olive oil, two cloves of grinded garlic and red hot pepper. Fry the garlic until golden brown, add the peeled tomatoes and cook them for about 15 minutes, then add a pinch of salt and the boiled beans, then add the emmer last. Let it season for 5 minutes and add a bit of oil and a basil leaf right before serving.
