They mainly come from cultivations in the Italian area, gathered in a farmers’ association of small organic producers, that avoid any use of herbicides, chemical fertilizers, fungicides, pesticides etc. Products are packed in a protective atmosphere in order to grant a long preservation and safe from parasite infestation.

THE RECIPE

PEARL BARLEY STUFFED ZUCCHINI

Ingredients:

450 g of zucchini

140 g of pearl barley “La Madre Terra”

1 aubergine

60 g of emmental cheese

6 little branches of thyme

1 clove of garlic

4 spoons of extra-virgin olive oil

Salt

Pepper

 

Preparation:

Boil the barley in abundant salty water for about 15 minutes as it starts boiling then strain it, put it under cold running water and pour it in a bowl. Top the zucchini, wash them and cut them in half longitudinally. Use a corer to hollow them out of their white pulp. Chop the pulp with a knife. Boil the hollowed zucchini for 3-4 minutes in a saucepan with salty boiling water, then drain them, let them cool and put them on a tray. For the stuffing: in the meantime, clean, wash and cut the aubergine into small cubes. Heat the olive oil in a pan and brown the peeled clove of garlic. Then add the cubed aubergine and the chopped zucchini pulp. Brown everything very well. Add salt and pepper and cook for 5 minutes. Finally add the barley and cook for 3 more minutes.

Add some finely chopped thyme, stir very well and turn the flame off. Cut the emmental cheese into small cubes and put them in the pan. Stir well. Take the boiled zucchini again and stuff them with the stuffing you have just prepared. Arrange the remaining stuffing in the dishes to create a bed of barley and vegetables, lay the stuffed zucchini on it, sprinkle them with chopped thyme and serve immediately.

RICETTA

TORTA DI ORZO PERLATO. CECI E VERDURE DI PRIMAVERA

Ingredienti

180 g farina tipo 0 bio “La Madre Terra”

70 g farina integrale macinate a pietra bio “La Madre Terra”

4 cucchiai d'olio extravergine d'oliva bio “La Madre Terra”

200 g orzo perlato bio “La Madre Terra”

1 mazzo di bietoline

2 cipollotti

300 g ceci lessati “La Madre Terra”

250 g ricotta soda

60 g parmigiano grattugiato

olio extravergine d'oliva bio “La Madre Terra”

Preparazione

Mescolate le farine con 4g di sale, l'olio e 100ml circa di acqua. Impastate aggiungendo l'acqua poco alla volta fino ad ottenere un impasto liscio e omogeneo e se necessario aggiungete altra acqua. Coprite con della pellicola e tenete da parte. Lessate l'orzo in acqua salata poi scolatelo e sistematelo in una ciotola. Lavate le bietoline, tritatele, non asciugatele del tutto e fatele saltare a fuoco vivo con poco olio e un pizzico di sale. Una volta pronte sistematele in uno scolapasta poi trasferitele nella ciotola dell'orzo. Fate soffriggere i cipollotti a fettine sottili con 2 cucchiai d'olio e i ceci scolati dal liquido di conservazione poi aggiungeteli al resto degli ingredienti con la ricotta e il parmigiano. Mescolate e regolate di sale. Stendete la pasta in una sfoglia sottile da 36cm di diametro circa, ungete una tortiera da 32 cm di diametro e sistemate la sfoglia lasciandola sbordare. Versate il ripieno all'interno, ripiegate la pasta e cuocete in forno preriscaldato a 180° per 1 ora circa.
