THE RECIPE
SOFT CAKE WITH APPLE JUICE
Ingredients:
250 g of “00” flour
1 bag of baking powder
130 g of brown sugar
125 g of margarine
2 apples
125 ml of apple juice “La Madre Terra”
2 eggs
50 g of almonds
a pinch of cinnamon

Preparation:
Turn the oven on at 180°. Mix flour and baking powder, sieve and add cinnamon. Melt the margarine in a bain-marie or in the microwave oven. Peel and grate the apples. Beat the eggs with sugar, then add the margarine and the flour little by little; as the mix becomes dry, add the apple juice. Finally add the apples delicately. Cut the almonds in thin slices with a very sharp knife (if you have no time you can grind them in a mixer or use those in scales). Pour the mix in a buttered cake tin (22cm. diameter) or in a silicone one and strew it with almonds. Put it into the oven for 45-50 minutes. Get it out and let it cool in the mould. Sprinkle it with a bit of powdered sugar and serve.
