THE RECIPE: POTATO GRATIN IN CREAM OF PEELED TOMATOES
Ingredients:
1.2 kg of red potatoes
4/5 dl fresh cream
400 ml milk
80 g Gruyere cheese
600 g of Gli Sbucciati "La Madre Terra"
100 g fennel
50 g shallots
Organic extra virgin olive oil La Madre Terra
salt and pepper
Preparation:
Peel the potatoes and cut them into thin slices and put them to cook in milk, add the cream, salt and pepper.
When cooked, remove from heat, add grated Gruyere cheese and mix
Transfer to 4 greased molds and allow to cool.
Sauté the shallot in a little oil, add the chopped fennel and add the peeled tomatoes.
Cook for 40 minutes. Meanwhile, put the potatoes in the oven at 220 degrees for 15 '.
With the immersion blender, pass the tomato and incorporate oil flush until a smooth and clear cream is obtained. Serve the gratin with sauce.
