Special on pasta, croutons or paired with meat or cheese dishes.
Once you have opened the product, keep refrigerated adding a tiny bit of oil on its surface.

RECIPE
RIGATONI IN TOPINAMBUR CREAM WITH FRESH TUNA
Ingredients:
50 g of rigatoni "La Madre Terra"
200 g of tuna in a single slice
1 jar of Jerusalem artichoke cream "La Madre Terra"
1 lime
1 and a half teaspoons of ginger
extra virgin olive oil
1/2 glass of broth
salt
black peppercorns
Preparation:
First of all, prepare the tuna for marinating: place the slice on a plate, sprinkle it with a pinch of salt, the filtered lime juice, half a teaspoon of ginger and sprinkle everything with a drizzle of oil; refrigerate for at least 30 min. After this time, bring the water to a boil for the pasta and in the meantime prepare the tuna: pour the marinating liquid into a saucepan, add another drizzle of oil and a generous pinch of ginger, heat well, add the slice of tuna and cook it for 6-7 min. on the other hand, keeping the flame rather lively. Drain the pasta retaining a few tablespoons of cooking water and dress it with the Jerusalem artichoke cream and the retained water. Serve and finish sprinkling with the chopped tuna, its sauce and a generous grinding of black peppercorns.
