SUPERIOR BLUEBERRY JAM
Ingredients: Blueberries (vaccinum myrtillus), brown sugar, lemon juice.
It is prepared with precious blueberries from Appennino Modenese, belonging to the Vaccinum Myrtillus variety, picked in the regional park of Frignano in a cool wood at about 700 m of height.
MINI BLUEBERRIES CHEESECAKES
Biscuits 250 g.
mascarpone 500 g.
a few spoons of milk
4 spoons of sugar
4 spoons of vanilla powdered sugar
1 full spoon of chestnut honey “La Madre Terra”
1 jar of superior blueberry jam “La Madre Terra”
Crumble the biscuits in a bowl and add some milk, in order to get a mixture you can use to form the small bases for the mini-cheesecakes. Put the mixture in small plates on which you will serve the mini-cheesecakes, with a circular shape form the bases cleaning away the exceeding mixture and put them in the fridge. Prepare the filling by working mascarpone with sugar and honey in a bowl until you get a soft and smooth cream. Get the bases out of the fridge and fill them with the cream you have prepared. Smooth the edging with a spatula and finish them covering each mini-cheesecake with a spoon of blueberry jam, then serve.
